VEGAN CHEESE

Cheese…. I am a completely cheese person. I don’t have any solution. I love cheese. Leave the cheese was one of the hardest things in my vegan way. Even more than the eggs (as I said in the post of the Spanish tortilla , my father’s one is EPIC). Cheese is… the salt of life xD You know, life without cheese is a life without sense (maybe I am exagerating a lot but… come on, if you are reading that is because you think like me!).

Vegan cheese person of the world… I summon you! I have a recipe that you need and for that, you will love me forever!

It is very simple… potatoes, carrots, olive oil, water, and… who makes the magic?

…. drum roll….

THE NUTRITIONAL YEAST.

What is the nutritional yeast? It is an inactive yeast that you can use as a condiment. You cannot make bread with it, it is not this kind of yeast. It has a lot of fiber, iron, and a lots of vitamins of the group B. It is very good for stimulate your inmunologic system and for some infections. And the best…. it has this cheesy flavor that we are looking for this recipe!

This recipe is not mine, I follow a Spanish blog called Danza de fogones since I became vegan and they were a referent for me in my way. They have lots of amazing recipes, please take a look to their blog because you will be sooo happy to meet them! Note: the blog is in Spanish, it is a good moment to prove your language skills!

In their recipe they use brewer’s yeast. Where I am currently live, I couldn’t find it, so I am using the nutritional yeast, the result is very similar!

The recipe can not be easier, you will see! You can use this cheese as a dip, like in the pictures, but you can use it too for pizzas, for cook delicious mac’n’cheese, or just to eat it with some broccoli… As usual, be creative!

VEGAN CHEESE

  • 360gr potatoes
  • 135gr carrots
  • 70 gr olive oil
  • 125 ml water
  • 1 tsp salt
  • 1tsp lemon juice
  • 35 gr nutritional yeast
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

 

  1. Peel the potatoes and carrots and boil them until soft.
  2. Put them in a bowl with all the rest of ingredients and blend it.
  3. THAAAT’S AAAAALL.
